Baked Oatmeal

Baked oatmeal is a deliciously warm treat on a cool September morning, a perfect back to school breakfast. You can even have the dry ingredients combined the night before to save a little morning time if you wish. The smell of cinnamon will bring any sleeping stragglers out of bed to see what is making that delicious scent!
- 3½ cups rolled oats
- 1 cup brown sugar
- 4 tsp. baking powder
- ½ tsp. salt
- Cinnamon
- 2 eggs
- ½ cup oil
- 1 cup milk
- Vanilla
Mix dry ingredients in a bowl.
Beat the 2 eggs with a fork in a 2 cup measuring cup.
Add the oil.
Add enough milk to fill the 2 cup measuring cup (approximately 1 cup milk).
Add a splash of vanilla.
Mix well.
Add the wet ingredients to the dry ingredients.
Pour and spread into a 9x13 pan.
Bake at 350 degrees for 25 minutes.
