Baked Oatmeal

Baked oatmeal is a deliciously warm treat on a cool September morning, a perfect back to school breakfast. You can even have the dry ingredients combined the night before to save a little morning time if you wish. The smell of cinnamon will bring any sleeping stragglers out of bed to see what is making that delicious scent!
Course Breakfast

Ingredients
  

  • cups rolled oats
  • 1 cup brown sugar
  • 4 tsp. baking powder
  • ½ tsp. salt
  • Cinnamon
  • 2 eggs
  • ½ cup oil
  • 1 cup milk
  • Vanilla

Instructions
 

  • Mix dry ingredients in a bowl.
  • Beat the 2 eggs with a fork in a 2 cup measuring cup.
  • Add the oil.
  • Add enough milk to fill the 2 cup measuring cup (approximately 1 cup milk).
  • Add a splash of vanilla.
  • Mix well.
  • Add the wet ingredients to the dry ingredients.
  • Pour and spread into a 9x13 pan.
  • Bake at 350 degrees for 25 minutes.
