Cheesy Potato Bake

Do you like cheese and potatoes?  Then this recipe is for you!
Servings: 8

Ingredients
  

  • 4 baking potatoes large, unpeeled
  • 1/4 cup butter or margarine
  • 1 tbsp onions grated
  • 1 tsp salt
  • ½ tsp dried thyme
  • 1/8 tsp pepper
  • 1 cup cheddar cheese shredded
  • 1 tbsp fresh parsley chopped

Method
 

  1. Thinly slice the potatoes and place in a greased shallow 2-quart baking dish. In a small saucepan, heat butter, onion, salt, thyme and pepper until the butter is melted.
  2. Drizzle over potatoes.
  3. Cover and bake at 425* for 45 minutes or until tender.
  4. Sprinkle with cheese and parsley.
  5. Bake, uncovered, 15 minutes longer or until the cheese melts.
