Bannock - A Northern Favourite

Ingredients
  

  • 3 cups flour
  • 3 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 cups hot water
  • 1 Tbsp. oil

Method
 

  1. Mix dry ingredients well.
  2. Slowly add the hot water, gently stirring. (DO NOT KNEAD.)
  3. Let stand for 10 minutes.
  4. On a floured surface, press out the dough.
  5. Cut dough into “pucks.” The mouth of a drinking glass works well for this.
  6. Heat oil in a pan on medium-high heat.
  7. Fry evenly on both sides until golden brown.
