Hope's Pumpkin Bread

When you are finished decorating with your pumpkins, you can cook them! Use the pumpkin puree for a delicious pumpkin bread!

Equipment

  • 2 loaf pans
  • measuring cups and spoons
  • 1 stand mixer
  • 1 medium bowl
  • 1 small bowl
  • 1 large stand mixer bowl
  • 1 whisk

Ingredients
  

Pumpkin Bread Dough

  • 3 cups flour
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. nutmeg
  • 1 1/2 tsp. cloves
  • 3/4 tsp. salt
  • 1 cup unsalted butter room temperature
  • 3 cups sugar
  • 3 large eggs
  • 2 3/4 cups pumpkin puree (I cooked a medium pumpkin and pureed it, let it cool, then measured 2 ¾ cups puree for this recipe)

Optional Topping

  • 2/3 cup packed brown sugar
  • 1/2 cup flour
  • 1/2 cup oats
  • 3/4 tsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 1/3 cup softened butter

Instructions
 

Making the Loaves

  • Preheat oven to 350 degrees.
  • Grease two loaf pans very well.
  • In a medium bowl whisk together the dry ingredients.
    3 cups flour, 1 1/2 tsp. baking soda, 3/4 tsp. baking powder, 1 1/2 tsp. cinnamon, 1 1/2 tsp. nutmeg, 1 1/2 tsp. cloves, 3/4 tsp. salt
  • In a large mixer bowl, combine the butter and sugar and mix just until combined.

  • Add the eggs one at a time, mixing well between each egg.

  • Turn mixer to medium, mix until light and fluffy.
  • Add pumpkin puree, mix until well combined.
    2 3/4 cups pumpkin puree
  • The mixer ingredients will look a little curdled or separated.
  • Add the dry ingredients and mix just until combined¬–don't over mix!
  • Divide evenly into both loaf pans and bake for 60-70 minutes or until a toothpick comes out clean.
  • Let cool 10 minutes before removing from pan.

Creating the Crumb Topping (optional)

  • Combine 2/3 cup packed brown sugar, 1/2 cup flour, 1/2 cup oats, 3/4 tsp. ground cinnamon, 1/4 tsp. nutmeg, 1/3 cup softened butter.
  • Sprinkle topping evenly over both loaves 5 minutes before end of baking time.
  • Return to oven and bake the additional 5 minutes.
