Newfoundland Blueberry Duff
As you read the recipe and prepare it, you may think it is meant to be dessert, but it’s not! It goes right on the plate with your chicken, potatoes, stuffing, carrots, gravy, cranberry, and this blueberry duff! It is almost like a cake, but you eat it with bites of your chicken dinner! Some Newfoundlanders even pour their gravy right over this dish, though not all prefer it that way. Don’t knock it ‘til you try it!
- 1 cup flour
- 2 tbsp. baking powder
- 4 tbsp. sugar
- ½ tsp. salt
- ⅛ cup butter
- 1 cup water
- ½ cup blueberries
Mix the dry ingredients in a bowl (flour, baking powder, sugar, and salt).
Cut in the butter.
Add 1 cup of water and mix.
Fold in the blueberries.
Pour into a greased square pan.
Bake at 350° for 30 minutes.
