Perfect Pancakes

Ingredients
  

  • cups flour
  • 3 tbsp. sugar
  • tsp. baking powder
  • 1 tsp. salt
  • cups milk
  • 3 tbsp. melted butter
  • 2 eggs
  • ½-1 tsp. vanilla

Instructions
 

  • Melt and cool butter.
  • Mix together the dry ingredients.
  • Mix the wet ingredients (wait until the butter has cooled.)
  • Combine the dry and wet ingredients, only until just combined.
  • Let sit for 20 minutes or so. (This makes fluffier pancakes.)
  • Pour onto a griddle or into a frying pan.
  • Flip when bubbling.
  • It's ready when both sides are golden brown.

Notes

If you want to make flavoured pancakes, some favourites are chocolate chips, blueberries, or bananas and chocolate chips! Fold whichever you choose into the batter before putting on the griddle. 
Another option to make these even more special would be to make a blueberry syrup by heating up frozen berries, water, cornstarch, and some sugar on the stovetop. Top your perfect pancakes with berry syrup and whip cream, and see your kids’ eyes go wide with excitement.
