Holiday Sweet Potato Casserole

Ingredients

Filling

  • 3 cups mashed sweet potato (canned or fresh)
  • 1/2 cup melted butter
  • 1/3 cup milk
  • 2/3 cup sugar
  • 1 tsp vanilla (optional)
  • 2 beaten eggs
  • salt to taste

Topping

  • 5 tbsp melted butter
  • 2/3 cup brown sugar
  • 2/3 cup flour
  • 1 cup pecan pieces

Instructions

  • Cook sweet potatoes and mash 3 cups (or measure out 3 cups of canned).
  • Mix the sweet potatoes with other filling ingredients.
  • Put in a 9” x 13” pan.
  • Combine all topping ingredients (except pecans) and use a pastry cutter to mix.
  • Stir in the pecans.
  • Spread over the filling.
  • Bake for 30 minutes at 350 degrees Fahrenheit.

Notes

What comes out of the oven after 30 minutes is the most delicious sweet potato casserole you could dream of. Serve it up along with your Thanksgiving meal and enjoy! You don’t need a big serving of this so there is lots to go around.
