Vegan Dandelion Cookies

Ingredients
  

  • 1 cup melted coconut oil
  • 1 cup organic cane sugar
  • 1/2 cup applesauce or 1 mashed banana
  • 2 tsp vanilla
  • 2 cups oats
  • 2 cups whole wheat flour
  • 1/2 cup freshly picked dandelion flower (yellow petals only)

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit.
  • Melt coconut oil over low heat on the stove. Set aside to cool slightly.
  • Remove the flower petals as described above and shake the petals into a measuring cup to fill to ½ cup.
  • Mix the oil and sugar together, then add the applesauce or banana and vanilla and mix well.
  • Stir in the oats, whole wheat flour and dandelion petals.
  • Place by the tablespoon onto a greased cookie sheet.`
  • Bake for 12 minutes or until golden brown on the edges.
  • Move to rack to cool and enjoy the dandelion benefits of these cookies!
